Vegan MoFo 2012, Tofu Scramble/Scrambled Tofu

I've been meaning to make tofu scramble for a while, and I finally got around to it- with scrambled tofu from Vegan With a Vengeance (p. 12).

I didn't have any mushrooms, but I did add green peppers, potatoes, cheddar Daiya, and some fresh jalapeño and cayenne peppers (not all of them).

I cooked mine about twenty minutes longer than directed because I like everything really well done.

Then I loaded it all up in a sammie and served it with habanero ketchup.

Even VM liked it!

  1. Your scramble does look good, but if I'm being honest, I'd have to say I've never had a scramble I loved. Maybe there weren't ever enough hot peppers or sriracha.
